Upon attending the bon odori Japanese festival last may 2017. I encountered a ramen stall offering a collagen broth, and one of them was labeled “truffle” ramen. Upon further inquiry, turns out it has shitake mushroom and the staff could not respond to the truffle question.
Nonetheless I ordered a bowl, for some reason none of the stalls thought about providing tables or even tall tables for standing to eat on, but the staff was kind enough to get me a chair.
First impression: the ramen was ok, standard chewy texture. The broth had a unique flavor, but seemed to salty to me. If I am ever in the area of their actual place, I would probably look into other items.
